I have been searching for a decent side dish to serve with my Mexican dinners for awhile now, and I think I’ve found it. And bonus – it’s dirt cheap. Hmm, maybe I shouldn’t use the word “dirt” to describe food.I have recently learned how to make my own tortilla chips for pennies (36 ct corn tortillas for $0.76 at Aldis and I only use three tortillas)! The only real cost is the salsa. But it’s still a pretty frugal dish.

  1. Stack your three tortillas. Using a pizza cutter, cut the stack into 8 pieces. Separate and place (one layer deep) on a baking sheet.
  2. Cook at 350 for 15 minutes, or until dry and crisp. You’ll have to bake them in three shifts unless you have multiple baking sheets. But if you cook them in shifts they’re always warm! The original recipe calls for them to cool, but if you eat them while they’re still warm you can pretend you’re sitting in an authentic Mexican restaurant.

And that’s it! Simple. Fast. Cheap. Hey, they’re even healthy.
