I have been searching for a decent side dish to serve with my Mexican dinners for awhile now, and I think I’ve found it. And bonus – it’s dirt cheap. Hmm, maybe I shouldn’t use the word “dirt” to describe food.I have recently learned how to make my own tortilla chips for pennies (36 ct corn tortillas for $0.76 at Aldis and I only use three tortillas)! The only real cost is the salsa. But it’s still a pretty frugal dish.
- Stack your three tortillas. Using a pizza cutter, cut the stack into 8 pieces. Separate and place (one layer deep) on a baking sheet.
- Cook at 350 for 15 minutes, or until dry and crisp. You’ll have to bake them in three shifts unless you have multiple baking sheets. But if you cook them in shifts they’re always warm! The original recipe calls for them to cool, but if you eat them while they’re still warm you can pretend you’re sitting in an authentic Mexican restaurant.
And that’s it! Simple. Fast. Cheap. Hey, they’re even healthy.

I can make them too! I mean, when you are in a country with no tortillas or tortilla chips, you have to improvise somehow. I have to make my own tortillas too. They are exactly like the store bought ones and all you need is some flour, salt and oil. But I have better luck with tortillas than I do making them into chips. They are often too thick. I bet you could make corn tortilla chips too.

WOW!!! I have salsa in the fridge and a stack of those corn shells on my microwave that I needed something to do with, because I thought they tasted nasty as shells!!! Thanks Beth!
So, I tried this last night without success.
– The chips turned out thick and flaky, not at all like tortilla chips. More like pita chips.
– They didn’t crisp up and get brown spots to let me know they were done- instead, they browned evenly all over and not taste a little overcooked (almost-but-not-quite burned)
I just noticed a difference- could it have something to do with using flour tortillas instead of corn? I’ll do it right next time & let you know.

As it is, I like pita chips, they just taste funny with salsa. The chips are good, but not what I expected.
Joanna – I haven’t tried them with flour tortillas, so that could be it. Sorry it didn’t work!
I can’t stand paying te high price for tortilla chips… BUT I really like chips and salsa. Thanks for the easy and frugal fix!
