I have at least one regular recipe that calls for buttermilk or sour milk.
However… I don’t want to let the milk sit out and get old (I never think about it far enough in advance). I can be a bit OCD with my recipes, so I HAVE to follow them TO THE LETTER (will not add regular milk when it calls for buttermilk!). And yet, I also don’t want to spend the extra money on buttermilk at the store.
So I found me a shortcut. SO easy. Takes five minutes. And, did I mention, cheap?
In a glass measuring cup, pour one tablespoon lemon juice for each cup of buttermilk you need. Then add the milk until it reaches the appropriate measurement. Stir and let set for five minutes.

this past week was halloween. this monday will be meet and greet monday. you know what i want to see.
It’s a great substitute! We can’t even get buttermilk here, so we “make” it. Vinegar works too, if your out of lemon.
I’ve done this many times, and it really does work–especially if you want to ‘marinate’ chicken in buttermilk, but you don’t have any.
