In case you were wondering, this is what we’re eating at our house this week:
Monday: gluten free lasagna (though I recently saw a recipe that used rice instead of noodles and I think I’ll try that next time instead!)
Tuesday: spending the day at the zoo (discount day!) immediately followed by a homeschool open house thingamabob, so I’d be lying if I told you there was any chance of me actually cooking anything on this day. Hello, Chick Fil A!!
Wednesday: shredded beef tacos
Thursday: maple glazed salmon
Friday: pizza. Both half-whole wheat crust and gluten free cauliflower crust on the menu. And also, sausage and peppers. Num.
Saturday: roast chicken. Josh’s family will be in town so hopefully this meal will he a huge and easy enough (throw it in the crockpot, eat 4-8 hours later!) meal for me to handle.
Sunday: pot roast. I’ll admit it. The creative portion of my brain doesn’t wake up til about lunch time. Perhaps around then I’ll get inspired to change this tried and true beauty to something new and daring. We’ll see.
There, that was helpful! Now I just need to get to the grocery store…

instead of potroast, i like to sub curried oxtail stew. its very similiar.

Are any of your gluten free things also dairy free? If so, I’d love to have some of the recipes. The lasagna sounds delicious but I’m sure it has cheese or dairy in it. The maple glazed salmon sounds great!
Yep, the lasagna has cheese. I’ll post the salmon recipe, though; it’s dairy free!
