We ended up not eating a few of last week’s meals. Yay. Less thinking for this week’s plan.
Monday – Chicken and Asparagus Casserole. I really need to post my gluten free version of this recipe. It’s fantabulous. Complete with buttery crumble topping.
Tuesday – Roast Chicken
Wednesday – Pot Roast
Thursday – Pizza, both whole wheat (this recipe, only replace half the bread flour with whole wheat flour) and cauliflower crust (need to perfect this recipe first, then share it!).
Friday – Leftover Night
Saturday – Leave for Chicago
Sunday – Leave for Colorado!

I love these posts!! They make me inspired to cook! This week we are having chicken & peach quesadillas, boboli pizzas, chicken guacamole tostadas, asiago & plum tomato tortellini and grilled portobello-goat cheese pitas. Mmmm. Plus two family get togethers this weekend which equal free meals plus delicious food 🙂

Tonight I”m having l/o Shepherd’s Pie, tomorrow night I’m making spaghetti to take to my bff’s for dinner after we load the moving truck. Last night was bacon & tomato sandwiches on the most amazing homemade gluten free bread (my mom makes some amazing bread!).
