Olivia and I have been gluten-free for a year. I wrote about the reason here.
Sunday, I sporadically decided it was time for an in depth experiment to see if it was still a necessary diet.
It may have had something to do with the fact that I was sitting in O’Charley’s buttering unslicably soft rolls for Levi and Benjamin. I just couldn’t take it anymore.
So far, it’s been going well! None of the old symptoms have been showing up! I’m not sure if it just takes time, or a larger accumulation of gluten, or if our bodies have healed, or if it never was gluten to begin with. But, in the mean time, as we figure it all out, we sure are enjoying Honey Oat Bread, Oreos, and cheaper grocery bills!
Also, believe it or not, I am grateful for the gluten-free year. It has taught me much about alternative baking, and given me a greater understanding for the families I know that are permanently gluten-free.
Yea! And then even if your symptoms reappear you have greater evidence for the gluten-free. So either way I’d call it a win.
