During my Gluten-Free Year, I learned some tricks to make life easier. One of them was how to cheaply replace bread crumbs.
I know a lot of gluten-free mommas just save the crumbs from their gluten-free bread, which makes a lot of sense and is FREE. But I didn’t have the right equipment for most of the year to make my own gluten-free bread. (A stand mixer). And I did NOT like the store bought gluten-free bread, so I wasn’t buying that!
So I used Rice Chex.
Says right on the box: Gluten Free!
I crushed them up and used them, cup for cup, in meatloaf and as casserole toppings. No one could tell a difference!

Great idea! I wish I would have known this in August when I was gluten free. Thankfully, I don’t have to worry about that now, but it’s good to know!
